Ingredients

6 oranges, 2 chives, 500 gr. salted cod, quail eggs, orange juice, 1 dl. of Extra Virgin Olive Oil, dried black olives, parsley or chives and coarse salt.

Preparation

Extract the segments of the oranges one by one and completely clean. Peel and wash the chives, cutting only the white part into a fine julienne. Crumble the cod, removing the skin and bones. Pit the olives and cut in half, sliced, into quarters. Cook and peel the eggs and reserve them to decorate. Assemble the plate by inserting layers of orange segments, chives, cod, etc. Sprinkle with the vinaigrette.
