Albóndigas de carne con nueces

500 gr of ground beef, 3 onions, 3 tablespoons of walnuts, lightly chopped, 1 whole egg, 3 tablespoons of extra virgin olive oil, 2 tablespoons of water-soaked breadcrumbs, 2 tablespoons of parsley chopped, 3 tablespoons pine nuts, roughly chopped, salt, pepper


Pour the oil into a large frying pan and sauté the finely chopped onions in it. Reserve the onions and conserve the oil.

In a large bowl, mix the meat, egg, squeezed breadcrumbs, sautéed onion, walnuts (or pine nuts), parsley, salt and pepper.

Form with this mixture meatballs of about three centimeters in diameter, and crush them between the palms of the hands.

Fry them in the pan that we have used to sauté the onion.

Serve the meatballs on a layer of onion and with the "Vegetable Salata".
