Ingredients

1 kg of red mullet, salt, pepper, 6 tablespoons of extra virgin olive oil, 4 tablespoons of wine vinegar, 1 teaspoon of sugar, 4 tablespoons of raisins, soaked in water for 1/2 hour, 5 tablespoons of pine nuts .

Preparation

Fish cavities are cleaned. The red mullets are placed, in a layer, in a shallow oven tray, so that the head of one fish touches the tail of another. Beat the oil, vinegar, salt, pepper and sugar in a bowl, and pour over the fish. Sprinkle with raisins and pine nuts. It is cooked in the oven at 190º C for 20 or 30 minutes, or until the fish is done.
