Ingredients
Traditional old clothes, 8 cabbage leaves, 10 onions, 1/2 liter of red wine, 1kg of seasonal mushrooms, 1 bunch of mushrooms.
Preparation
Cook the cabbage leaves in boiling water, leaving them al dente. We cool and dry them. We fill them with the old clothes by making little packages. We booked. Besides, in a pot, fry the cut onions, add the red wine and let it reduce to a third of its volume. Add the cooking broth to the meat, well defatted, letting it boil until it has the consistency of sauce (we can tie it with a little cornmeal).
We clean the mushrooms and sauté them with a little olive oil and salt, add a little juice and reserve it. We clean the garlic sprouts and sauté them (if they are very long, we cut them in half).
We heat the packages of old clothes and place them on a plate; Add the mushrooms and garlic on top and around the plate, sprinkle with a string of sauce and decorate with some herbs.
