Ingredients

1 chicken, extra virgin olive oil, salt, ground black pepper, coriander, ground cinnamon, saffron thread, 150 c.c of vinegar, 115 g of ground almonds, 115 g of sugar, rose water.

Preparation

We take a chicken, clean it well and make it small pieces. In a pot we put oil, the chicken pieces and add salt, ground black pepper, coriander in grain, cinnamon powder and saffron in thread.

It is put on the fire and we get dizzy without it getting to brown, adding one 115 c.c. of vinegar. Let it cook until it is in the oil, being the moment to add 115 grams (4 ounces) of ground almonds and another 115 grams (4 ounces) of sugar dissolved in rose water. We let it simmer "until the fat rises".
