Ingredients

Young broad beans, boiled potatoes, roasted aubergines, roasted onions, puff pastry on the grill, oil, vinegar, salt, freshly ground black pepper, ground cumin.

Preparation

We roast the aubergines and onions and reserve them; remove the skin and slice the potatoes. We put the puff pastry to cook, we peel the beans and put them in oil.

Assemble the plate: in the bottom 3 slices of aubergine, 3 of onion and 3 of potatoes. Top the beans, vinegar, salt, black pepper and ground cumin. We finish the plate with two puff pastry triangles. Serve all very cold.
