A hare, a glass of white wine (or cognac), a glass of extra virgin olive oil, and a glass of water.


The hare is skinned and allowed to air one night. Place it whole in a clay pot and add the glass of white wine, or if you prefer, you can use cognac, add the glass of extra virgin olive oil, and the glass of water. We put the pot over high heat until the stew begins to boil, then we will reduce the strength of the flame and let everything cook for about four hours.
