Ingredients

A hare, 200 gr of onion, 2 cloves of garlic, salt, pepper, 200 gr of thistle mushrooms, a sprig of thyme, 2 bay leaves, a few grains of cumin, a few sprigs of parsley, 300 gr of flour, 1 dl. approximately olive oil.

Preparation

Once the hare is cleaned and bled, we cut it into small pieces. In a saucepan with a little oil, brown them together with the chopped onion and garlic, add the thyme, the ground cumin and some bay leaves. Let it cook until the onion is well fried. At this time, we cover with water and let it boil until the meat is almost cooked; Then we add the cleaned mushrooms (chopped if the size allows it) and a few minutes later we add the gurullos and cook for some more time until the pasta is just right. Once off the heat, we put a little chopped parsley.

For the gurullos we make a dough with wheat flour, water and a little salt; Knead as if it were bread dough and let it rest. We take small portions and stretch them with both hands until we make a kind of thread that then, with the tips of both fingers, we will cut into pieces similar, both in shape and size, to rice grains.
