Ingredients

  • 6 pieces of cod
  • 4 fresh onions or large chives
  • 3 garlic cloves
  • A teaspoon of cumin
  • 400 gr of crushed tomato
  • A tablespoon of sugar
  • Salt
  • A jar of fried tomato Mata
  • Flour
  • Extra virgin olive oil

Preparation

We put the cod to soak for 36 hours, the water is changed every 12.
Drained and dry, it is floured and in a pan with olive oil we fry it first with the skin turned upwards, then we turn it over, we reserve it.
In a pot, put oil and the finely chopped onion, when we have it half browned, add the crushed natural tomato, the bay leaf and the salt, let it cook.
In a mortar, crush the cumin branches together with the garlic, with a little water we smooth this mixture and put it on the tomato.
We put the fried cod slices inside and move so that they are submerged inside the tomato.
Ten more minutes boiling and we have it ready to serve.
