5 maestros que cocinan desde el corazón

Pedro Sánchez es un maestro de las combinaciones extremas de ingredientes y un chef que ha posicionado a su restaurante Bagá en la élite gastronómica nacional. La cocina de Sánchez se caracteriza por lanzar una mirada extraordinaria sobre lo ordinario. Formado principalmente en la Escuela de Hostelería La Laguna de Baeza, en su familia no hay cocineros profesionales ni el más mínimo contacto con la hostelería. Uno de los aspectos más destacables del chef es su habilidad para la creatividad y la innovación.

Juan Aceituno, chef del restaurante Dama Juana, destaca por su habilidad para transformar los sabores jienenses tradicionales en alta gastronomía, y convertir los sabores familiares en un menú degustación de altos vuelos. La suya es una cocina sincera y con raíces, que bebe de un pasado en el que su abuela paterna jugó un papel esencial inculcándole el amor por la cocina.

Sobre la cocina del chef jiennense Javier Jurado se dice que es un viaje a través de los paisajes que le han acompañado a lo largo de su infancia. La palabra ‘Malak’, que da nombre a su restaurante, proviene del árabe y significa 'Ángel', un claro homenaje al restaurante de sus abuelos ‘Los Ángeles’ en el que aprendió los secretos de la cocina familiar. Malak ofrece una variada carta que fusiona lo mejor de la cocina segureña con toques de autor.

Juanjo Mesam, por otro lado, también se curtió en un restaurante familiar: La Alcuza de Pegalajar. Es un chef apasionado de carácter valiente y emprendedor, con un talento apegado a la tierra y una cocina que se nutre del pasado pero que también expresa el presente. El restaurante toma su nombre de Radis, ‘rábano’ en francés, un guiño al mote de su madre en Pegalajar, ‘la Rabanita’.

Juan Carlos García, del restaurante Vandelvira, ofrece una atrevida apuesta por la alta cocina arraigada en los sabores y recetas tradicionales de la provincia. Con una dilatada formación y experiencia que le ha llevado por las principales escuelas gastronómicas del país y por algunos de los Restaurantes Estrella Michelin más destacados de España, este chef baezano nos ofrece la oportunidad de entender lo que significa “cocinar desde el corazón”.

A good wine can partly remedy a bad meal, but a bad oil is capable of spoiling the best of delicacies. In short: A good olive oil sublimates all the ingredients of any stew.

In Jaén, which is above all a land of olive trees, but which also has its good wines and unbeatable breads, this function of a discreet but essential actor, who has given it to oil in the gastronomic scene, is reflected in a multitude of dishes whose preparation begins by putting olive oil to heat in a pan, as is the case with traditional fried dishes, whether they are meat, fish, vegetables or pastry dough, or culminating in other dishes as ours as the pipirranas. The production of the pipirranas ends with a generous drizzle of extra virgin olive oil, which exhales a characteristic, aromatic fruity flavor, reminding us of the fragrance of freshly cut herbs.
