It is believed that the history of the tapa began in an establishment where, in order to protect the wine from insects, they began to put a cheese or sausage “tapa” and to taste it.

This legend comes from the time of Alfonso X "El Sabio", who in turn ordered that in Castilian inns wine should not be served if it was not accompanied by some food, so that it would not rise quickly to the head.
