Sobrehúsa

Sobrehúsa is a traditional stew from Cambil and Arbuniel, especially linked to spring, when green broad beans are in season. It is a flavourful and complete spoon dish, made with vegetables, cured meats and egg, reflecting the region’s popular cuisine.

Its preparation begins with a sofrito of tomato, pepper and onion, cooked with Sierra Mágina PDO extra virgin olive oil. The broad beans, morcilla, chorizo or ham, together with the lettuce, are then added and left to cook slowly until the stew becomes thick and full of flavour. Finally, beaten egg is added to bind everything together.

A traditional seasonal recipe, closely connected to the use of garden produce and the flavours of mountain cooking.
