Ropa vieja

Ropa vieja is a traditional dish from Jódar, closely linked to resourceful cooking and timeless home recipes. It is made with the meat and chickpeas left over from cocido, reused to create a simple, dry and very flavourful preparation.

Its preparation consists of sautéing the cooked meat and chickpeas with garlic, Sierra Mágina PDO extra virgin olive oil, paprika, bay leaf and salt, until the mixture becomes lightly browned and full of flavour. It can be served on its own or with bread, as a humble yet hearty dish.

A recipe that reflects the wisdom of popular cooking, where nothing is wasted and the previous day’s ingredients are transformed into a new dish full of identity.
