Pipirrana

Pipirrana is a traditional salad from Huelma and other areas of Jaén, especially linked to summer. Fresh, simple and full of flavour, it is made with ripe tomato, onion, boiled egg, shredded cod, olives and tuna, making it one of the most representative dishes of the area’s summer cuisine.

To prepare it, the tomatoes are peeled and chopped, then mixed with the rest of the ingredients. Everything is dressed with Sierra Mágina PDO extra virgin olive oil, salt and a touch of oregano. Served very cold, it is a humble and refreshing recipe that reflects the importance of seasonal produce and extra virgin olive oil in traditional Jaén gastronomy.
