Papajotes

Papajotes are a traditional sweet from Pegalajar and other areas of Jaén, commonly found at festivals, local fairs and popular celebrations. They are made with a simple batter of flour, milk, egg and sugar, which is fried in hot oil to form small, irregular fritters with a soft texture.

To prepare them, the batter is spooned into Sierra Mágina PDO extra virgin olive oil and fried slowly until golden. Once fried, they are drained and sprinkled with sugar or served with honey, resulting in a sweet, humble bite closely linked to Jaén’s popular pastry tradition.
