Gachas de harina
Flour gachas are a traditional dish from Larva, deeply rooted in popular cooking and especially connected to the simplicity of rural life. Of humble origin, they form part of those recipes once prepared by shepherds and rural families with basic ingredients, designed to nourish and comfort using what was available in the pantry and garden.
Their preparation begins with a dough made from flour and water, which is added to a broth prepared with garden vegetables such as red pepper, green pepper and aubergine. Depending on family tradition, there are savoury versions served with products from the traditional slaughter season, as well as sweet versions, especially linked to All Saints’ Day.
A simple dish full of memory, preserving the essence of resourceful cooking and reflecting the gastronomic identity of Larva and the rural areas of Jaén.
