Aceites Ildefonso Espinosa, in Pegalajar, is a family-run olive mill with a long tradition deeply connected to the landscape and olive-growing culture of Sierra Mágina. Located at 820 metres above sea level, in the heart of the Natural Park, the company produces distinctive oils shaped by the unique characteristics of the territory: small microclimates, a Mediterranean climate with strong temperature contrasts between day and night, and clay-loam soils with a limestone base that help maintain the olive tree’s water balance.

The surroundings of Pegalajar, with its rolling olive groves and mountain air, give each harvest its own personality and unique nuances. The olive mill follows a philosophy rooted in knowledge of the land, respect for nature and the pursuit of oils that authentically express the identity of Sierra Mágina through careful craftsmanship and attention to every stage of the process.
