Entering the world of extra virgin olive oil means discovering a landscape, a culture and a way of understanding life. At Cortijo Las Huertas, this experience invites visitors to go one step further: not only to learn about the process, but also to interpret it through the senses.

The route begins in an olive mill with history, where a 1941 hydraulic mill reveals the origins of traditional production. Among stone, iron and memory, visitors understand how olives were transformed into “liquid gold” using methods that still shape the identity of the territory today.

From there, visitors move on to the modern olive mill, where today’s technology makes it possible to observe the complete production process, from the reception of the fruit to its bottling. This contrast helps visitors understand the evolution of an essential product in Mediterranean culture.

The central moment arrives with the guided tasting in the AOVELab space. Here, olive oil becomes a language: green aromas, fruity nuances, textures and sensations that visitors learn to recognise as a professional taster would. Attributes, possible defects and keys to distinguishing different qualities are discovered, while myths are dispelled and the palate is refined.

The experience is completed with a tasting of products made with EVOO, connecting the knowledge acquired with gastronomic pleasure.

Un grupo de visitantes atiende a un guía en el exterior de una almazara, durante una explicación sobre el proceso o la cultura del aceite.

Espacio interior con maquinaria histórica de molienda, donde se observan prensas y elementos tradicionales utilizados en la producción de aceite.

Varias personas, incluyendo niños, participan en la recogida de aceituna en un olivar tradicional, utilizando cubos y herramientas bajo un paisaje de lomas.
