Morcilla de Res

Morcilla de res is a traditional sausage from Albanchez de Mágina, especially linked to winter and the traditional slaughter season. Made with lamb’s blood and meat, spices and natural casing, it forms part of the hearty mountain cuisine designed for the coldest months of the year.

Its preparation combines the cooking of lamb’s feet and tripe with a traditional sofrito of vegetables and spices, in which Sierra Mágina PDO extra virgin olive oil adds flavour and character to the dish. It is served hot, as a winter recipe full of tradition and local identity.
