Hojuelas
Hojuelas are a traditional sweet from Bedmar y Garcíez, Cárcheles, Albanchez and other towns in the region, especially linked to Holy Week. They are made with a liquid batter of eggs, flour, water, citrus and oil, which is left to rest before being fried with a mould in very hot oil.
Once fried, they become light, golden and crisp, and are then sprinkled with sugar and cinnamon or vanilla. The use of Sierra Mágina PDO extra virgin olive oil for frying adds flavour and identity to this traditional pastry recipe.
