Collejas stew

Collejas stew is a traditional recipe from Cambil and Arbuniel, especially linked to spring, when these wild plants grow in the countryside. It is a simple dish, closely connected to popular cooking and the use of the area’s natural resources.

To prepare it, the collejas are first blanched to soften their bitterness, then added to a crushed mixture of fried bread, garlic and paprika diluted in water. Everything is sautéed for a few minutes until it becomes a thick, flavourful stew with the distinctive character of seasonal recipes.

Sierra Mágina PDO extra virgin olive oil adds flavour to the mixture and reinforces this dish’s connection with the region’s gastronomic tradition.
