Guiñapos

Guiñapos are a traditional thick soup from La Guardia, closely linked to popular cuisine and dishes made with leftover ingredients. They are prepared with wheat flatbreads cut into strips, which are added to the broth to give it body and achieve the characteristic texture of this stew.

The recipe has different versions depending on the ingredients available, and may include vegetables, clams, anchovies or meat. Everything is cooked slowly until the flatbread strips blend into the broth and the dish takes on a thick, flavourful and comforting consistency.
