Gachas with honey
Gachas with honey are a traditional dessert from Huelma, especially linked to All Saints’ Day. It is a simple recipe deeply rooted in popular cooking, made with toasted flour, fried bread, milk and honey, resulting in a creamy, sweet and comforting preparation.
Its preparation begins by frying pieces of day-old bread in Sierra Mágina PDO extra virgin olive oil, which are then set aside as croutons. In the same oil, the flour is toasted, stirring constantly while cold water is gradually added until a thick but smooth cream is obtained. When served, it is accompanied with milk and honey, mixed directly in the bowl to add sweetness and texture.
Traditionally, they were eaten on All Saints’ night and form part of those timeless recipes connected to family memory and the popular customs of Huelma.
