Flour migas

Flour migas are one of the most characteristic recipes of Cambil and Arbuniel and of the region’s traditional cuisine. Unlike other versions, in Cambil they are usually prepared as a large golden cake, slowly cooked in a pan and worked patiently until they reach their distinctive texture.

Their preparation begins by heating Sierra Mágina PDO extra virgin olive oil, in which the garlic, pork belly, chorizo and peppers are fried and then set aside. Water, salt and flour are then added to the same oil, stirring constantly until the mixture cooks, pulls away from the pan and begins to brown. Finally, it is shaped into a cake and turned over so that it becomes golden on both sides.

Once ready, it is served with the reserved pork belly, chorizo and peppers. Traditionally, it may also be accompanied by fruit such as melon, grapes or orange, creating the contrast between savoury and fresh that is so typical of popular cooking.
