Kid goat with garlic
Kid goat with garlic is a traditional recipe from Bélmez de la Moraleda and other areas of the region, closely linked to mountain cuisine and dishes with intense flavours. It is a simple and hearty preparation in which the kid goat meat is slowly cooked until tender and served with a thick, aromatic sauce.
The preparation begins by frying the chopped kid goat in extra virgin olive oil with the Sierra Mágina Protected Designation of Origin until it is well browned. Then, a mixture is made with garlic, fried bread, parsley and cumin, which is added to the meat together with white wine. Everything is left to reduce slowly over a low heat, creating a flavourful sauce that concentrates the aromas of the garlic, spices and extra virgin olive oil.
