Carnerete
Carnerete is a traditional dish from Cambil and Arbuniel, Cárcheles and other areas of the region, closely linked to popular cooking and the hearty flavours of the sierra. It is made with cured meats, bread, vegetables and broth, resulting in a thick, flavourful stew full of character.
Its preparation begins by frying pork belly, chorizo and morcilla in Sierra Mágina PDO extra virgin olive oil. Then, a crushed mixture is prepared with bread, garlic, onion and dried pepper, and combined with meat broth and tomato. It is left to reduce slowly, allowing all the flavours to concentrate. Finally, beaten egg is added to thicken the stew, and the cured meats are mixed in before serving.
A traditional and substantial recipe that reflects the region’s resourceful cooking, where simple ingredients are transformed into dishes full of flavour and identity.
