Arbuniel river crayfish

Arbuniel river crayfish in sauce are a traditional recipe from Cambil and Arbuniel, especially remembered for the importance that Arbuniel river crayfish once had in the local gastronomy. Although they have now disappeared due to the invasion of other species, the traditional way of preparing them remains part of the village’s culinary memory.

To prepare them, the crayfish are carefully cleaned and rinsed several times in water, adding a little vinegar during the final wash. They are then cooked in Sierra Mágina PDO extra virgin olive oil until they take on their characteristic red colour. Chopped garlic, chilli, fried tomato and white wine or sherry are then added, allowing the sauce to reduce and concentrate all its flavour.

They are always served hot, as a tapa or appetiser, in a flavourful, intense recipe closely linked to the traditional cuisine of Arbuniel.
