Pumpkin with broth
Pumpkin with broth is a traditional dish from Albanchez de Mágina, especially linked to autumn, when pumpkin becomes a key ingredient in seasonal cooking. It is a simple and flavourful recipe made with vegetables, cod and clams, which add depth to the broth and give the stew a distinctive character.
Its preparation begins with a sofrito made with Sierra Mágina PDO extra virgin olive oil, onion, green pepper, cod and clams. Paprika, bay leaf and a crushed mixture of garlic, cumin and parsley are then added, and everything is left to cook slowly until the pumpkin becomes tender.
