The experience is structured around several carefully designed moments to connect with the culture of olive oil, from its origin to the table.
We begin on the esplanade of Cortijo Las Huertas, where visitors are introduced to the history and tradition of an olive-growing family whose journey goes back several generations. In this first contact, visitors discover the context of the olive grove, the value of the surroundings and the role of extra virgin olive oil as a central element of the territory.
Next, the tour takes us to traditional production systems, with a visit to the 1941 hydraulic mill. Here, visitors understand how olive oil was made in the past, before entering the modern olive mill, where the differences between traditional processes and current extraction techniques are shown, as well as the different types of oil and their by-products. The visit continues through the cellar and bottling area, completing a comprehensive view of the process.
The experience culminates in its most participatory and sensory part. Depending on the season, visitors harvest products from the organic vegetable garden and the olive grove surroundings, before preparing a typical Andalusian recipe in the AOVELab space. This final moment allows visitors to experience gastronomy from the inside, understanding olive oil not only as a product, but as an essential ingredient of Mediterranean cuisine.
