Andrajos with hare

Andrajos with hare are a traditional stew from Bélmez de la Moraleda and other areas of Jaén, especially linked to winter. It is a hearty spoon dish made with slowly cooked hare and thin flour cakes that are added to the stew to give it body and thickness.

Its preparation begins with a sofrito of onion, tomato, pepper and garlic, cooked with Sierra Mágina PDO extra virgin olive oil. Water and the hare meat are then added, and everything is left to simmer slowly until the meat becomes tender. Finally, the flour cakes, cut into strips, are added to the broth, where they finish cooking and provide the characteristic texture of andrajos.

A traditional, flavourful recipe closely linked to mountain cuisine, resourceful cooking and winter dishes.
