Gachas
Gachas are a traditional dish from Albanchez de Mágina, especially linked to winter and cold weather. They are a thick, creamy preparation made with toasted flour, potatoes, vegetables and paprika, resulting in a hearty, humble and flavourful dish.
Their preparation begins with a sofrito made with potatoes, green peppers, dried peppers and tomato, slowly cooked with Sierra Mágina PDO extra virgin olive oil. Paprika and flour are then added, with the flour toasted before the water is incorporated, creating the characteristic texture of traditional gachas.
A simple and substantial dish that reflects the everyday cuisine of Albanchez de Mágina, connected to local produce, resourceful cooking and recipes passed down in family homes.
