Salt Cod with Onions

• 6 pieces of salt cod • 4 fresh onions or large spring onions • 3 garlic cloves • A teaspoon of cumin • 400 g of crushed tomato • A tablespoon of sugar • Salt • A jar of Mata fried tomato sauce • Flour • Extra virgin olive oil
Preparation
• Soak the cod for 36 hours, changing the water every 12 hours. • Drain and pat dry, then coat in flour and fry in a pan with olive oil, first with the skin facing up, then turning it over; set aside. • In a pot, heat some oil and add the finely chopped onion; once it's half golden, add the crushed fresh tomato, the bay leaf and salt, and let it cook. • In a mortar, crush the whole cumin seeds together with the garlic; loosen this mixture with a little water and add it to the tomato. • Add the fried pieces of cod and stir so they're fully submerged in the tomato. • Simmer for another ten minutes and it's ready to serve.
