Migas de harina (fried flour crumbs) is one of the most characteristic recipes of Cambil and Arbuniel and of the region's traditional cuisine. Unlike other versions, in Cambil they are usually formed into a large golden cake, prepared slowly in a pan and worked patiently until achieving its characteristic texture. Preparation begins by heating extra virgin olive oil with PDO Sierra Mágina, in which the garlic, pork belly, chorizo and peppers are fried and then set aside. Water, salt and flour are added to that same oil, stirring constantly until the dough cooks, comes away from the pan and starts to brown. Finally, a cake is formed and flipped so it browns on both sides. Once ready, it is served with the reserved pork belly, chorizo and peppers. Traditionally it can also be served with fruit such as melon, grapes or orange, creating that contrast between savoury and fresh so typical of popular cuisine.
