Carnerete is a traditional dish from Cambil and Arbuniel, Cárcheles and other areas of the region, closely tied to popular cuisine and the hearty flavours of the mountains. It is a recipe made with cured meats, bread, vegetables and stock, resulting in a thick, tasty stew full of character. Preparation begins by frying the pork belly, chorizo and black pudding in extra virgin olive oil with PDO Sierra Mágina. Then, with bread, garlic, onion and dried pepper, a crushed mixture is prepared and combined with meat stock and tomato, letting it reduce slowly until all the flavours are concentrated. Finally, beaten egg is added to thicken the stew and the cured meats are stirred back in before serving. A traditional, hearty recipe reflecting the region's resourceful cuisine, where simple ingredients are transformed into dishes full of flavour and identity.
