The traditional cuisine of these saws is simple, honest and with deep roots. The extra virgin olive oil, an undisputed protagonist, unites the three comarcas under the protected designations of origin Sierra de Cazorla and Sierra de Segura. From there, a variety of flavors is displayed based on nearby ingredients: Segureño lamb, game meat, trout, mushrooms, cheeses artisans, sausages, flour, legumes, orchard fruits or wild herbs.
Dishes such as rhinos-ran, serrana crumbs, andrajos, gachamigos, garlic flour or ajopringue are part of a recipe that is still alive, both in local houses and in restaurants and rural sales.
Gastronomy and sustainability
Through oleoturism, many almazaras open their doors to the visitor to show how the AOVE is produced, to offer tidy tasting and tasting, or even natural cosmetic workshops made with olive oil.
It is also possible to discover the traditional orchard, to go through centuries of olive trees, to learn about honey, mushrooms, organic wines, cheeses artisans or bread of mother mass. All of this with practical experiences, guided walks or group activities that connect with the origin of the products and people who make them possible.
