From curing to tasting: a journey through traditional flavors with La Despensa del Berral

In the heart of the Natural Park of the Sierras de Cazorla, Segura and Las Villas, in the village La Matea, is La Despensa del Berral, a gourmet shop that offers local products, such as its well-known ham and loins of its brand Jamones Fuente El Berral. Its factory, located at 1,280 meters of altitude and the weather conditions are ideal for the salting and natural healing of the ham. Since 1996, specialists have improved their techniques to become the region's reference points. Its varieties of ham include white pig (18-24 months), Castaña Duroc (up to 24 months) and Chato bat (up to 30 months). The experience includes a visit to the ham and loin dryer, where visitors learn about the traditional healing process, which benefits from the climate of the Sierra de Segura to get unique flavors. At the end of the visit, participants enjoy a tasting where they experience the taste of the healing of their own ham and loins, accompanied by local products such as wines, cheeses, fries, oil and sausages.
