The province of Jaén provides approximately 20% of the world's olive oil production and 50% of the Spanish oil production. The more than 66 million olive trees are a sign of unequivocal identity, not only of the Jiennese cuisine, but of the culture, landscape and way of life of its people. Olive oil is the cultural emblem of a population that works permanently to highlight the exquisite, quality and healthy properties of this product. Olive oil is now synonymous with excellence and health. It is one of the fundamental foods of the Mediterranean diet and gives a touch of distinction to any dish in our kitchen.
The jiennese cuisine has in the extra virgin olive oil of the Picual variety, the integral element of an amazing and natural gastronomy that is manifested through the many dishes made with the vegetables of its gardens; with the hunting meats, which here they call "mountain" and with the fish of the mountain rivers. Conventual potages and sweets of an almost mystical gastronomy; pharinaceous peas in which their traditional recipes are nuanced with suggestive own names: Andrajos, harapos, calandrajos, guñapos, galianos and talarines. Extra virgin olive oil-dried bread-mill breakfast. And above all, a sublime tapestry, which has its highest expression in cities like Jaén and Linares, with the peculiarity that in all the Jiennense land the lid is included in the price of the drink.

The products of the orchard, the cereals and the extra virgin olive oil, the lambs of the saws, the mountain meat derived from the hunt, and above all, the "know-how" transmitted from generation to generation from remote times, make the traditional jiennense cuisine a delight for the most exquisite palates. It could be said that the gastronomic culture of the Mediterranean has in the bread, wine and olive oil its three fundamental pillars, although these three ingredients, which participate equally in the food and nutritional aspects, do not have the same presence in the rite and the gastronomic liturgy. The bread, without a doubt, is the one who calls the table, protected in the mystical connotations that Mediterranean cultures have given it over the centuries. Wine is the one who entertains, coming to say of it that it is the "intellectual part of food." But oil has less visible work, we could say that more spiritual, but not less appreciable.

The distinctive "Jaén Selección," created by the Diputación de Jaén, includes the best extra virgin olive oils from each harvest. With this distinctive the excellence of this product is awarded.
The selection of these oils comes from a Cata-Contest, which is convened on an annual basis, under the criteria of a jury composed of professionals from the best tasting panels in the country. With this distinctive are the best oils of Jaén, the world's main olive oil producer. After their selection, these oils are present in all the tourism and agri-food promotion actions that drive the Jaén Diputación and play a leading role in the OleotourJaén tourist strategy.
