Preparation

Almoronía is a traditional stew from Cambil and Arbuniel, especially associated with the autumn and winter months. Made with dried broad beans, pig's cheek, vegetables and spices, it is a hearty one-pot dish, full of flavour and closely linked to the popular cuisine of the mountains. Its preparation begins with the slow cooking of the beans together with garlic, onion, tomato, bay leaf and pig's cheek, later adding spices such as cumin, paprika and cinnamon. Orange peel lends a very distinctive aromatic note that sets this stew apart and gives it its own character. The use of extra virgin olive oil with PDO Sierra Mágina reinforces the flavour of this traditional recipe, usually served with fried egg and parsley, making it a complete, energising dish deeply rooted in the region's recipe book.
